Will my students lose their progress if they're working on an assignment and log out before completing it?

No, student progress is saved as they complete and submit each problem in an assignment.  Students can leave and return to the assignment via the assignment link they used to access the assignment originally (within Canvas or Google Classroom). Any problems they have submitted will be saved.
